Owner Carina was born with a brain tumor that took the majority of her sight when she was just an infant, and left her with lifelong challenges. But the determination , humility, and DIY attitude that brought her grandfather ("Morfar') from Sweden to America and on through the army to eventually opening "the biggest little Scandinavian store in New England"- made Carina a fighter. Plus, early on, with her senses lightened as her sight was diminished, she developed a love of food and especially for baking. While shaping cardamom bread or rolling dough balls by her mother's side, she not only learned recipes passed down through generations along with the stories that came with them, but each treat formed let out stress and creativity while giving a piece of herself to the person enjoying it - since very often a strict diet prevented Carina from being able to enjoy the items herself.
Carina's baking community grew as she took her creativity to the next level, building upon classic recipes nad taking them out on a tricycle to sell to friends and neighbors. While learning how to market her products, hustle to fill orders in the hot summer heat, and choose how to use her money (to buy toys/clothing for cancer kids) Carina gained a true knack and enjoyment for the whole baking business, and set her sights on pastry school and someday opening a bakery. Little did she know how hard knox the businesses was, and after fighting out for her place among her peers (between courses, internships, a few odds jobs and even grad school) Carina couldn't find a job in the food industry, so she took it upon herself to make the kind of f job she would have wanted - baked goods that make you feel good, underserved individuals gaining a job, local producers being supported, and a little help for the environment too.
For business, and for the people
What one person sees as a weakness, we see as a strength. Carina might be blind, but she cna hear everything that's going on in the bakery awhile flavors come together in the pan. an employee might get distracted and talk too much, but stye can connect with customers like no one else. If our kitchen can accommodate them, we are willing to hire and train them to become a part of our team. The best part is that everyone here loves their job and cna't wait to come back ot work. Taht, combined with magical baked goods that outperform the boundaries of diary free, egg -free and gluten free goodness makes us the haven you've bene searching for!
For the people that have poured their life and soul into creating the flour we use, the coffee that perfumes the air, and the produce that brightens up our kitchen- we seek to support them too! While our products may not be organic or 100% whole grain, Carina prides herself as making as healthy, crave-worthy treats as possible while sourcing form local vendors before anything else.

As the survivor of 3 brain tumors, Carina, has traveled from Connecticut to Rhode Island to Oregon to pursue her passion and be her self rather than be constrained by what people think a blind person with health challenges should be.
Now, Carina works not only to create the space she always wanted to work in, but where people want to stay and be inspried, where new possibilites for careers, adaptations, and bliss cna be explored for employees and cusotmers iwth allergies alike. The journey is just beginning, even almost 10 years in.
