Lingonberry Coffeecake (vegan, soy free)
Lingonberries are ubiquitous in Scandinavia - they're bright red, currant-sized berries that withstand the harsh, long winters and pop up waiting to be foraged. Think of them as if you could have an introduction to cranberries... petite and packing a tart punch but not a bitter and mouth-coating. We put these juicy little orbs into a sour-cream-style coffeecake that is similar to ones you'd find all over Europe; its cinnamon crumble inviting you to tear off a chunk! Despite its name, it doesn't actually have any coffee in int, but sure does make a good pairing with a cup and an excuse to take a break, Swedish fika style! These are snackable loaf, about 4 inches long by 2 inches wide.
Ingredients: baking powder (with cornstarch), cultured coconut milk, cinnamon, citrus zest/oil, Earth Balance Soy-Free Margarine, flaxseed, lemon juice, lingonberries, molasses, organic cane sugar, salt, sifted whole grain flour, vanilla extract
